WHAT ARE MICROGREENS?

Microgreens are an exciting form of plant based nutrition that are young and tender leaves. They are edible vegetables that are harvested when the first leaves of the plants emerge and prior to plant maturity.  Sprouts, microgreens, and baby greens are all normally-occurring stages in plant growth, and there are different reasons why you would want to harvest a plant at each stage. These plants start as seeds, then sprouts, followed by microgreens, baby greens, then finally mature plants. Each of the names- sprouts, microgreens, and baby greens are all considered different products, as the plant is harvested for eating at different times.  Microgreens are very young, tender plants, used as salads or garnishes on many types of dishes. They can add color, texture, and interesting flavors to meals. They can also be used to enhance soups, salads, sandwiches and other foods.

Microgreens may be eaten raw, juiced or blended and can be incorporated into a variety of cold and warm dishes

In most cases, the microgreens contain higher concentrations of vitamins, minerals, and antioxidants than the mature plants. Microgreens are gaining popularity among chefs for added flavor and the enhanced visual presentation of the entree.  Consumers are seeking options for better nutritional alternatives and the enhanced flavor.  Microgreens are best grown indoors in a controlled environment.
